Ingredients
2 lbs. of the freshest tomatoes you can find (plums are great!), cut in half, seed, broil for 5 min.
1 onion
1 bunch cilantro, remove from stalks, reserve 3T to add after processing or as garnish
1 10-12oz. jar tomatillo or regular salsa
Hot peppers to taste (I like 1 habenero/Scotch Bonnet or jalapeno)
1 green pepper
Garlic to taste (I use the whole head! Try it roasted sometime.)
1 lime
2T honey (don't substitute sugar)
Preparation
Combine all ingredients in food processor or blender. Mix to consitency you like. This will make about 6 cups--use within one week or freeze (small wax-coated drink cups from Dixie are great for this) 2 months.
